Ground Turkey, Kale, Great Northern Beans and Mushroom Soup

I got the idea of this soup from www.sundaynitedinmer.com. However, instead of using spinach and cannellini beans I substitute it with kale and great northern beans, respectively. It just took awhile to cook the beans but the soup turns out so good. It was my first time using kale and great norther beans.

1. Sauté ground turkey and mushroom with garlic and onion. Season with salt and pepper.

2. Add the chicken stock, dried rosemary, dried thyme and great northern beans.

3. Bring it to boil until the beans is cook. (I suggest that it's better if you prepare the beans a night before by soaking it in water to soften it before cooking)

4. Add the kale and simmer until the vegetable is cook. Adjust the seasoning if you desire.
